Salted Butter Caramel

Its been months of hibernating in kitchen and bed wisely... finally there is some pinch of time where i can slip some of my fav recipes to share with u... so here it is the salted caramel... great for anything.. ice cream, macaron filling, pie... my daughter like to dip it with crackers.. and don’t bother to just lick it with your fingers... finger licking gorgeous.. STICKY... A BIT SALTY.. CREAMY... YET YUMMY!!


Ingredients :

250 gm Castor sugar

75 ml water

120 ml cream

200 gm salted butter


How to make salted butter caramel....

Heat the sugar and water in a saucepan over a medium heat.Watch over the sugar until it becomes a lovely golden brown caramel colour.


Next, remove from the heat and immediately pour the cream little by little, gently stirring with a spatula to stop the caramel cooking any further.Now.. you have to be careful at this stage as the caramel will foam up and can burn.WATCH OUT THE SPLATTERS.


Once the caramel is well incorporated, put in the butter pieces by pieces while whisking until it smooth and even.Done.Have a taste!!! Yummeh....


Pour into a suitable container and chill in the refrigerator so that the caramel will thickens.ENJOY.

Biskut Batik (no egg, no bake biscuit)



want to please the kids?? great for door gift... cheap , easy and fast to make... another great recipe.. one of my son`s fav.. hot selling item during ramadhan bazaar... have it a try and u 'll know it...sligtly crispy but not gooey.... full flavour of chocolate.. you wont regret...

Ingredients:

½ kg marie biscuit
½ cup butter
100 gm milo(sweetened cocoa drink)
2 tbsp sweetened condensed milk
3 tbsp good cocoa powder
2/3 cup sugar
2/3 cup water


How are you going to make this....

Roughly break each biscuits, set aside.

Add all the ingredients in a saucepan... butter, sweetened condensed milk, sugar,water, cocoa powder, Milo to the saucepan.Put on a medium heat and stirring vigorously until it but smooth and even...keep on stirring all the time... UNTIL you find it thickens to a almost like a texture of honey...turn the heat to low

Immediately add in all the biscuits inside the pan and mix altogether... make sure that each of the biscuits are well coated with the chocolate sauce...put off the heat.

While it still piping hot....transfer mixture to the prepared tin. Press down firmly so there are no air pockets in the mixture. ...then let it cool on the counter... no need to refrigerate....

When the cake is firm..does not take a long time..about 1-2 hrs max.... .slice and serve with coffee or tea....to make it more interesting for party favour... cut into small cube and coat it with melted chocolate... there you have it another recipe.... cookie nougat...enjoy!!!

Tok Aji Serban ( steamed sticky rice layered with coconut and sugar palm pudding)

This kueh if translated into english version - the old man with the turban.. i dont know who created the name at the first place but that is the real name...maybe the old man came from the sticky rice layer and the turban part from the dark brown layer egg pudding on top of it..

This is one of my favourite kueh during ramadhan, the bit of saltines from the rice and sweetness from the pudding really balanced the taste.Seems hard to make... i disagree with that.Let me show you how..

First thing u need to make is the palm sugar syrup
just put everything in a small pot 4 pieces of palm sugar, pinch of salt and about 4 tbsp of water.... just cook on a small flame until everything dissolve and take off the heat, set aside.. move on to next step..wont take much time.. Just in case u dont have any palm sugar, can simply substitute with dark brown sugar about 1 cup... the results might differ *|*....base:

1 Cup glutinous/sticky rice
1/4 cup coconut cream
1/2 cup water
pinch of salt
Place the washed glutinous rice in a baking pan with all the ingredients.Steam it for about 15-20 min approximately .Once the rice cooked, use spoon or anything that u can find in the kitchen to press on it... make it a compact .Set aside .Now we can start making the egg pudding.

The method of making this almost like making the steamed caramel pudding..nothing fancy

for the pudding layer:

5 eggs
1 cup coconut cream
the sugar syrup that we prepared earlier
pinch of salt

How to ?
Just mix all the ingredients in a big bowl (syrup, eggs,coconut cream and pinch of salt). Give it a whisk until well incorporated and pour everything onto the rice base that we made earlier.Again, steam it for about another 15- 20 mins. This kueh is done when you press onto the pudding and it feels springy.Take it out from the steamer and let let it cool.Bon apetit.

Kuih Cara Manis (mini pancake with melted sugar filling)


Ingredients :

2 C flour
2 C water
1/2 C coconut milk
1 egg
pinch of salt
some pandan paste or green food coloring

How to ?

First, u need to prepare the batter.. for me its a rather simple method.Dump... erk.. ok, put everything in a bowl and whisk everything until well incorporated.Well the faster way. u may use the technology... that is THE BLENDER.. either one ,OK ??This kuih is specially baked in the cara mould, but if u don’t have it... no worries.. just use regular small muffin pan but the results might not be the same..don’t blame me for that..for the same mould i can make the kuih bahulu, cara berlauk, akok berlauk or even mini apple pie with different shapes... worth the investment i must say...

Back on track...

After the blending/whisking moment... for better mixture u can set it aside for minutes then the batter will thickens slightly... not too runny nor too thick..

A must thing to do, heat the mould ON THE STOVE and grease some oil or it will stick.Low heat... not smokey hot..then pour the mixture into the mould and straight away ... in the middle of each kuih, top with a tiny teaspoon of sugar.Immediately the sugar will sink to the bottom and melting away.

Cover the mould with anything that fits so that the heat will stays inside and keep continuing cooking the kuih.I just use my old skool pot lid.precious....

The kuih will ready in few minutes.You’ll notice the mixture will shrink slightly and the green colour became darker.Fork it out, put on plate.While they still warm, sandwich them together .Done.

Salted Caramel Apple Pie



just wanna share this recipe that i ve made for tea... no much talking as i just came back from dentist.. urgh.... rotten tooth.. need to drink more milk after this... more calcium please... i made some changes to this recipe... got some leftover salted caramel from my last batch of macaron.. no ice cream to indulge with so it ended up with the apples instead.. its an express apple pie...wallah..the crust recipe was a long kept recipe since i was in high school.. taken from a classmate .. tg ...its a flacky, tender and golden recipe...

crust recipe :

2 C cake flour
1 C cold butter/shortening
2/5 cup cold water
dash of salt
flour for dusting

How to make the crust?

In a large bowl, combine flour and salt. Cut in cold butter until mixture
resembles coarse crumbs.You can just use your finger tips but never with your palm as the heat will melts the butter into creamy texture. Stir in water until mixture forms a ball. Divide dough in half, and shape into balls. Once you have rolled out the dough, wrap it around the rolling pin and unroll it onto your pie pan.Once you have shaped it to fit the inside of the pan, take a fork and poke holes in the bottom of the crust. This will let the steam out as the pie bakes.

Tips :Never overwork the dough,the less handling the better for a more tender and flaky crust.

The apple pie filling :

3 granny smith apples cuts into chunks or thinly slice
1 tsp cinnamon powder
1 tbsp flour as thickening agent
Homemade Salted caramel sauce

**you can easily substitute the caramel sauce with 1/4 cup of sugar and 1/4 cup of brown sugar, 1/4 cup butter.Mix everything in a bowl.Set aside

How to assemble everything?
  1. Preheat the oven. In large mixing bowl, mix all ingredients until apples are well coated. Pour into pie crust.
  2. Pour over the salted caramel sauce onto the well coated apples. Place about 4 chunks of butter on top of apple filling(optional). This will give the filling rich flavor.
  3. Roll out the remaining pie dough or you can make any shape u desire and place it on top. Brush top crust with beaten egg
  4. Time to bake.Bake at 200ÂșC for 40 to 50 minutes or until crust is golden and apples are tender and juicy.Bon apetit.

Best Ever Princess Vanilla Cupcake.....


i can sense that there had to be a better cake than i tried many times before... always got distracted by the variety flavours and colourful cupcakes many can find.... but to be honest they never really got me so well...

this is my first attempt using the real vanilla beans that i bought bout a week ago...so fortunate, the cake was so light and moist... and the smell was divine...so delicious.. so here goes the recipe..

Ingredients
  • 3 cups cake flour
  • 1 tbsp. baking powder
  • ½ tsp. salt
  • 1 vanilla bean, split lengthwise
  • 16 tbsp. (2 sticks) unsalted butter, at room temperature
  • 2 cups sugar
  • 5 large eggs
  • 1¼ cups buttermilk got no buttermilk ,i just use milk
  • 1 tbsp. vanilla extract
Directions
  1. Preheat the oven .Line cupcake pans with paper liners. Set aside.
  2. In a medium mixing bowl, combine the cake flour, baking powder and salt. Whisk together and set aside.
  3. Add the butter and sugar to the bowl of an electric mixer fitted with the paddle attachment .Scrape the vanilla bean seeds into the bowl of the mixer with the butter and discard the pod.
  4. Beat on medium-high speed for 3 minutes, until light and pale in color.
  5. Mix in the eggs one at a time until incorporated.
  6. Combine the milk and the vanilla extract
  7. With the mixer on low speed, add the dry ingredients gradually and mixing just until well incorporated.
  8. Filling each paper cup about 2/3 of the way full.
  9. Bake 18-22 minutes, or until a toothpick inserted in the center comes out clean. Allow to cool in the pans 5-10 minutes, then transfer to a cooling rack to cool completelyServe it with your favourite buttercream or frosting... but i'm a greedy person .. so, i just ate it straight away...cannot stand of temptation..delish...
