just wanna share this recipe that i ve made for tea... no much talking as i just came back from dentist.. urgh.... rotten tooth.. need to drink more milk after this... more calcium please... i made some changes to this recipe... got some leftover salted caramel from my last batch of macaron.. no ice cream to indulge with so it ended up with the apples instead.. its an express apple pie...wallah..the crust recipe was a long kept recipe since i was in high school.. taken from a classmate .. tg ...its a flacky, tender and golden recipe...
crust recipe :
2 C cake flour
1 C cold butter/shortening
2/5 cup cold water
dash of salt
flour for dusting
How to make the crust?
In a large bowl, combine flour and salt. Cut in cold butter until mixture resembles coarse crumbs.You can just use your finger tips but never with your palm as the heat will melts the butter into creamy texture. Stir in water until mixture forms a ball. Divide dough in half, and shape into balls. Once you have rolled out the dough, wrap it around the rolling pin and unroll it onto your pie pan.Once you have shaped it to fit the inside of the pan, take a fork and poke holes in the bottom of the crust. This will let the steam out as the pie bakes.
Tips :Never overwork the dough,the less handling the better for a more tender and flaky crust.
The apple pie filling :
3 granny smith apples cuts into chunks or thinly slice
1 tsp cinnamon powder
1 tbsp flour as thickening agent
Homemade Salted caramel sauce
**you can easily substitute the caramel sauce with 1/4 cup of sugar and 1/4 cup of brown sugar, 1/4 cup butter.Mix everything in a bowl.Set aside
How to assemble everything?
- Preheat the oven. In large mixing bowl, mix all ingredients until apples are well coated. Pour into pie crust.
- Pour over the salted caramel sauce onto the well coated apples. Place about 4 chunks of butter on top of apple filling(optional). This will give the filling rich flavor.
- Roll out the remaining pie dough or you can make any shape u desire and place it on top. Brush top crust with beaten egg
- Time to bake.Bake at 200ºC for 40 to 50 minutes or until crust is golden and apples are tender and juicy.Bon apetit.
